This technology makes it possible to soften meat fibers without destroying them, which ultimately allows for high-quality and quick marinating or salting of raw meat. Products after such processing acquire juiciness, exceptional taste, and a fibrous structure when cut, which makes the product more attractive to the consumer. How it works: A vacuum massager consists of a rotating drum with steel blades inside, which slowly moves pieces of meat, creating a mechanical massage effect. The vacuum pump promotes the process of plasticization and massage of meat in a vacuum; rapid and enhanced absorption of salt brine, spices, and marinades occurs. After a vacuum massage, the meat becomes juicy and voluminous.
