Description
Agar agar 1000 (E406) is a high-strength, fast-hardening plant gelling agent derived from red algae. The "1000" label means the gel's very high strength, making it ideal for marshmallows, marmalades and soufflés. It is thermally reversible, solidifies at \(35\text{--}40^{\circ }\text{C}\) and does not require a refrigerator to solidify. Main characteristics and applications: High strength: Gels are durable and stable, withstanding transportation.Application: Used in the production of jams, marmalades, marshmallows, soufflés, marmalade.Consumption: Due to its high strength, it requires less than other thickeners (usually 1 tsp. per 200-250 ml of liquid is enough).Preparation: Dissolves only at a temperature above \(90^{\circ }\text{C}\) (at boiling).Advantages: Completely vegetable product, suitable for vegan, halal and kosher dishes. .
