Description
Sodium citrate (food additive E331) is used as a multifunctional agent: acidity regulator, emulsifier, flavor and texture stabilizer, and preservative, preventing food spoilage and improving its properties, especially in beverages, dairy products, cheeses, and desserts. In medicine, it acts as an anticoagulant (prevents blood clotting) and for alkalizing urine, and in cosmetics it acts as a chelator and hair conditioner. In the food industry Drinks: Gives acidity, improves the taste of lemonade and energy drinks, stabilizes them. Dairy products: It is used for the production of processed cheeses, infant formula, dry dairy products, as it helps milk withstand heat treatment. Meat and fish products: Preservative, stabilizer in sausages, sausages, semi-finished products. Confectionery: It is used in jams, jellies, marmalades, marshmallows, soufflés, improving their texture. Other: Speeds up the whipping of cream and ice cream, improves the texture of mayonnaise, speeds up the salting of meat.
