Protein 13.5% – 14.5% During grinding, part of the protein goes into the bran. In order for 12% to remain in flour, the grain should have 1.5-2% more. Gluten 28% – 32% (IDK 65-75) Tipo 00 requires elastic but strong gluten. Grades 1-2 of the RK provide this. Grain Ash Max 1.7% – 1.8% If the grain ash content is higher, the mill will not be able to "pull" T45 (0.50%) without losing yield volume. Vitreousness 50% – 60% Too high a glassiness (>70%) is good for pasta (Semola), but average values are better for soft flour Tipo 00. Falling number 300 – 350 sec. When grinding, it will fall off slightly. If there is 220 in the grain, then in flour it can fall below the critical 200. Humidity Max 13.5% – 14.0% Standard for railway transportation across the Caspian Sea. Impurities (Sieve) Max 2% (weed) Weed impurity sharply increases the ash content of flour.
