Kazakhstan Develops Technology for Producing Marbled Lamb
The innovation is based on intensive lamb fattening and the use of a specially formulated balanced compound feed
Scientists from the Kazakh Research Institute of Processing and Food Industry, operating under the National Agrarian Scientific and Educational Center (NANOC), have developed a new technology for producing marbled lamb based on the Kazakh Fine-Wool sheep breed. The innovation is aimed at producing high-quality lamb with improved consumer characteristics and strong export potential.
The technology is based on a scientifically developed system of intensive lamb rearing and fattening, combined with a specially formulated balanced grain compound feed. The feed contains grain and protein components, probiotics, plant-based additives, premixes, and minerals. This feeding system promotes rapid animal growth, stable metabolism, and the uniform formation of intramuscular fat.
During the research, scientists were able to maximize the genetic potential of the Kazakh Fine-Wool sheep breed. The intramuscular fat content in lamb reached 4–6%, compared with approximately 2–3% under traditional pasture-based production. As a result, the meat developed a distinct marbling, characterized by greater juiciness, tenderness, and rich flavor.
The study also demonstrated improved slaughter performance. The yield of the most valuable meat cuts increased, while the ratio of muscle to fat tissue became more balanced. This enhances the commercial value of the product and expands opportunities for export.
The developed technology covers all stages of lamb rearing and fattening. The specially formulated compound feed ensures intensive growth, stable physiological processes, and the development of a marbled meat structure.
According to the developers, the resulting marbled lamb meets modern quality and safety requirements for export products. The technology can be introduced at sheep farms across Kazakhstan specializing in premium-quality meat production.
The scientific significance of the innovation has been confirmed by two utility model patents, and the research results have been published in specialized scientific journals.
The introduction of the new technology is expected to support the development of the meat sheep industry, increase the production of value-added products, and strengthen Kazakhstan's export potential.
