REALPECTIN L-20 is a low-esterified amidated citrus pectin (E440ii) from an Italian manufacturer, standardized with dextrose. It is characterized by a high reaction to calcium and is designed to create thermoreversible gels in products with a low dry matter content (jam, marmalade) and a neutral or weak pH level (4.0-5.0).
